The Rajasthani cuisine is particularly colorful with the use of spices like yellow turmeric and red chilli making up for the drab monochromatic landscape of the desert. The bati was a popular dish used by the Rajputs during battles where the part cooked batis were buried in spots of the desert to be retrieved in times of long marches. The hot sand would act like an oven and bake these.

Khaman Dhokla
Bajre ki Khichdi- A Winter Dish of Rajasthan
Bajre ki Khichdi of Rajasthan made of Bajra - group of small-seeded species of cereal crops or grains. They are an excellent source of protein, iron, folic acid and fibre.
Bajre ki Kichdi, a dish usually prepared in winters, helps keeping your body warm. Its creamy consistency and mild flavors make it a good recipe to have especially in the preconception period and first trimester.
You can add some spices, throw in some vegetables and serve it with curd – it will taste delicious.
Dal Bati Choorma
Dal Bati Choorma is a Rajasthani Dish which has three main servings - Dal(lentil), Bati (baked wheat balls) and Choorma (sweet cereal powder). Dal is served with Bati and Churma...Dal Bati Churma is usually served either during the lunch time or dinner time. The more ghee you use in this recipe, the better it tastes. The city of Jodhpur, Jaipur and Jaisalmer are famous for this Rajasthani dish.
Rabri - A Delicious Sweetdish
The Sweets in Rajasthan is as diverse as the state itself. In some areas it is simple and basic while in others it is exotic and elaborate. Besides spicy flavors, each region is distinguished by its popular traditional food Mirchi bada, pyaz ki kachori and doodh ladoos from Jodhpur, malpuas from Pushkar, bhujia, papad and rasogullas from Bikaner, mishri mawa, ghevar and rabri from Jaipur... the list is endless.

Ghewar
Ghewar is a delicious Rajasthani sweet, consists of rounded cakes of wheat flour which suger syrup is poured. Ghewar sweet known for its matchless sweetness comes in varieties such as plain, desi ghee, paneer and mawa. Paneer ghewar is garnished with paneer and is highly demanded for their tasty flavor.
It is generally prepared in January for Makar Sankranti, in March-April for Gangaur and in July-August for the Teej festival.

Snacks in Rajasthan vary from deep fried “Samosa” and “Mirchi Bada” to the lighter “Bhujiya”. But every snack has a distinctive flavor and texture, to suit everyone’s palate.
Mirchi Bada, is a spicy Rajasthani snack consisting of chili (Mirchi) and potato stuffing, served hot with tomato sauce or occasionally with mint and tamarind chutney.
Moong Dal ka Halwa
Moong Dal ka Halwa is a unique sweet dish of lentils sweetened with milk and sugar. This calorie laden halwa is often prepared during the winter months, as it is supposed to keep the body warm and protect it from the bitter winter cold.
